No Need to Ripen
GREEN TOMATO RELISH
6 quarts firm green tomatoes, cut into half-inch pieces
2 quarts chopped onion
1/4 cup hot peppers
6 cups sugar
2 cups vinegar
2 cups water
½ cup salt
Combine and heat to a boil. Put in hot jars and seal.
Yield: @ 7 ½ quarts
FRIED GREEN TOMATOES
1 cup cornmeal
½ cup flour
1 tablespoon sugar
green tomatoes, sliced
salt and pepper to taste
Mix together cornmeal, flour and sugar.
Dredge both sides of tomatoes.
Press slices firmly into meal to coat thoroughly.
Add tomatoes to hot oil, without crowding, and fry about 2 minutes or until golden, turn, fry.
Drain on paper towel, salt and pepper.
But if it does ripen, go back to the old standby:

Fried Green Tomatos are one of my favorite things to eat. I used to look forward to this time of year. Dang Tom you have made me crave some fried green maters.I can almost taste ummm .
